Spicy chili, lots of it

Ive been trying to prepare more "convenience food" at home so that I'll stop eating out. I had a great conversation with Serena the other night regarding how key this is to ingesting the foods you've set the dietary intention for. My weaknesses really come down to lazy eating and just grabbing something premade wherever I happen to be so if I have already prepared stuff at home it eliminates the junk potential pretty much entirely.

So tonight (and throughout the rest of the week) I'm doing chili, and lots of it. I can't remember the last time I even made chili so Im just kind of winging it. Its so easy to make and it's got all the kind of ingredients that for at least now (beef is a rare special treat) I'm choosing for myself while I listen to my body and my guides about what is best for me. I love the the simply organic seasoning packets. They're so simple. And organic.



 So this is a few hot peppers I picked out, one orange bell pepper, half a red onion, the best ground beef Capella had available, diced tomatoes, Simply Organic vegetarian seasoning packet, and two cans of chili beans. Coconut oil as always being the choice oil to cook with. Side note, I read an article today about how coconut oil is curing Alzheimer's despite lack of research which has to do with pharmaceutical companies blah blah blah. Anyway, i really do believe in the many health benefits of the coconut oil and was happy to cook these veggies and meat with it today and everyday.


I would have done this in the slow cooker but today's theme is lots of food done the quick n easy way. This is comfort food with whole ingredients and nothing in it I don't want. I hope it tastes as good as my hands are burning from the peppers I chopped.
