Day 3 of 28-day challenge

I made it through more than 10 percent of my challenge already! I just need to repeat that 8 more times. But you know, it's not really that hard. Today at softball people were cracking beers after the game, and that made me wistful, but I couldn't drink beer even if I wasn't doing the challenge, because I was on my lunch break for work. So I accidentally slept in for my assignment, but made it more or less at the planned meeting time, just not showered. I drank my lemon water, then had an americano and some more water. I didn't eat until about noon, when I had leftovers from the sausage/ veggie thing and a bunch of greens between innings of my softball game I had a few strawberry slices from my friend Angela's daughter At work I had more of the leftover beef and veggies with greens and a kombucha. It had raw honey in it, but i never said whether that was a violation. I'd say it is, but I don't lose the challenge b.c I make up the rules and it wasn't sweet and didn't spike my insulin. When I got home I had two dates and some cherries, so maybe it spiked my insulin more than I realized... Oh, well, we're still good. Shaun helped me prep food for the next couple days. We made five mini servings (3 oz, aprox 20 grams protein) of meat sauce, carnitas and baked chicken, three of my trusty standbys. These are all packaged in tupperware in the fridge and ready to go. We roasted cabbage in the baked chicken juices, 10 carrots in the some weird pesto I made and prepped the chard for tomorrow or next day... ready to season and bake or do whatever. I need more greens. I only have one head of broc, one tub of greens and one thing of kale. But we're good to go on proteins, and I will make more on bootcamp days when I have time to cook between class and work. Exercise? A 2-hour softball game. I was 4/5 but never got past second base, so not a ton of running there. Still lagging on water. Pampering was shower face scrub and washed and curled my hair to Shaun's delight. Oh, and how could I forget? I invented the best thing! Pork and popcorn. I may just have this savory little treat at the wedding, late night. Basically it's the carnitas cut really tiny, but also the seasoned grease tossed in the popcorn with salt and pepper. So delicious!
